EVERYDAY FOOD | Spicy Chicken Wings

24 chicken wings, about 6-lbs

1/3-to-1/2 cup lemon juice
1 teaspoon olive oil
1 tablespoon mayonnaise
8-to-12 cloves garlic, minced
1/2 teaspoon tomato paste
2 tablespoons shatta (Mid-East hot chili sauce), or any chili paste
2 1/2-to-3 teaspoons salt
1/3 teaspoon black pepper

Wash chicken wings, drain thoroughly and pat dry with paper towel. Slit in 2 or 3 places using a small paring knife.

Combine marinade ingredients and whisk until smooth. Add wings, toss to mix and then transfer into a large plastic bag. Seal and refrigerate at least 8-to-12 hours; tossing bag occasionally to redistribute flavors.

Preheat oven broiler for at least 15 minutes. Arrange chicken wings on a non-stick foil covered sheet pan. Broil 15 minutes until nicely golden. Remove from oven; pat dry excess liquid using paper towel. Turn wings over and broil for another 8-to-10 minutes until crispy brown. Serve immediately.
