Stir-Fried Green Beans + Tofu with Thai Chili Paste

1 tablespoon sunflower oil
3 garlic cloves, minced
2 tablespoons Thai red curry paste
1 cup water
2 cups green beans, cut into 2-inch pieces
8-to-10 oz fried tofu pieces
2-to-4 kaffir lime leaves, thinly sliced
1 red jalapeño chili pepper, de-seeded, sliced
3 tablespoons palm sugar
1 teaspoon or more Nam Pla fish sauce
steamed jasmine rice

Heat oil in pan on medium-heat, add garlic and cook for a couple of seconds. Add red curry paste and stir cook until fragrant and oil starts to separate at the edges. Add water and green beans and cook uncovered until beans are almost tender.
Add fried tofu to pan along with kaffir lime leaves and jalapeño pepper. Stir-fry until peppers are just starting to soften. Add palm sugar and fish sauce to taste and cook for a little bit longer until done.
Serve hot with steamed jasmine rice.
