A refreshing combination of heirloom tomato and watermelon wedges with layers of contrasting flavors and ricotta salata cheese.

Perfect for spring or summertime entertaining.

 

Ricotta Salata is a salted Italian cheese made with sheep’s milk.  Milk curds and whey (fresh Ricotta) are pressed, dried and aged for over 60 days.  It is a semi-firm white cheese with a lightly salted, sweet, nutty, and milky taste.

 

HEIRLOOM TOMATO, WATERMELON AND RICOTTA SALATA SALAD

 

Sweet and crisp seedless watermelon wedges; rind removed
Assorted heirloom tomato slices
Radish slices
Red onion or shallots; sliced paper thin
Fresh basil or mint leaves; torn or cut into thin, long strips
Red wine vinegar, sherry vinegar, or balsamic vinegar
Extra-virgin olive oil
Fleur de sel, coarse sea salt or Himalayan pink salt
Coarse black pepper
Ricotta salata cheese, feta or goat cheese crumbles

This salad is best served well-chilled. Mix all ingredients, except cheese, 30-to-40 minutes ahead of time and refrigerate. Gently toss in cheese crumbles about 10 minutes before serving.
